Lake Malawi, Cape Maclear - as it's name kind of suggests, gorgeous clear water (so long as you don't go during rainy season). 'Underdeveloped' is an exaggeration here but there are still diving, sailing, kayaking rental places, some amazing island within close reach (by kayak say) with in-bush accomodation close to the elements.
